چکیده

The aim of the present study was to isolate Saccharomyces cerevisiae from Saccharum officinarum commonly known as Sugar cane. Saccharomyces cerevisiae was collected from sugarcane juice from different areas that have different atmosphere, soil composition and temperature. Sample of sugarcane juice preserved at 0°C ice bugs. Sample were shifted to the laboratory and stored at 4°C for 15 hours and proceed further for study. Saccharomyces cerevisiae species was identified by applied for different tests including morphological, cultural and biochemical characteristics, which facilitate the opportunity for identification of the yeasts. These strains were observed to produce various extra cellular enzymes. Qualitative analysis of H2S production and which Mutants were screened using colony color on (BSA) agar.

Biochemical and molecular characterization of Saccharomyces cerevisiae strains obtained from sugar-cane juice fermentations and their impact in cachaça production.

Saccharomyces cerevisiae strains from different regions of Minas Gerais, Brazil, were isolated and characterized aiming at the selection of starter yeasts to be used in the production of cachaça, the Brazilian sugar cane spirit. The methodology established took into account the screening for biochemical traits desirable in a yeast cachaça producer, such as no H2S production, high tolerance to e...

Isolation and Identification of Yeast Strains Capable of Producing Single Cell Protein from Whey in Co-Cultures with Saccharomyces cerevisiae

In this study, twenty-five whey samples collected from dairy industries in the city of Isfahan. The sampleswere cultured on malt extract broth (MEB) and yeast extract glucose chloramphenicol agar (YGCA) media.Eleven yeast strains (designated M1 to M11) were isolated from the culture. The strains were identified bytheir morphological and physiological properties. Betagalactosid...

Evaluation of stress tolerance and fermentative behavior of indigenous Saccharomyces cerevisiae

Sixty six indigenous Saccharomyces cerevisiae strains were evaluated in stressful conditions (temperature, osmolarity, sulphite and ethanol tolerance) and also ability to flocculate. Eighteen strains showed tolerant characteristics to these stressful conditions, growing at 42 °C, in 0.04% sulphite, 1 mol L(-1) NaCl and 12% ethanol. No flocculent characteristics were observed. These strains were...
